細辛腦是一種苯丙素類化合物，菖蒲屬和細辛屬等植物中就含有細辛腦。[3]細辛腦可以殺死有害生物和細菌。[4]細辛腦可以進一步細分為兩種同分異構物，分別是α-細辛腦和β-細辛腦。[3]
歐洲調味品協會專家委員會（The Expert Committee on Flavourings of the Council of Europe）認為β-細辛腦是一種致癌物質[5]，歐洲調味品協會專家委員會還建議以菖蒲為原料製成的苦精中的菖蒲濃度應該有所限制。 [6]
